2 ½ cups quick cooking oats
11⁄2 tsp baking powder
1 Tbsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp ground ginger
1/4 tsp ground cloves
4 Tbsp dark brown sugar
3 eggs
¾ cup skim milk (or 1/2 cup half & half, plus 1/4 cup water)
1 tsp vanilla extract
2 Tbsp canola oil
1⁄2 cup no sugar added apple sauce

Directions
Preheat oven to 350 degrees. Combine oats, baking powder, spices, and dark brown sugar in a large bowl. Mix to blend. Beat eggs in a medium bowl and then add milk, vanilla, canola oil and applesauce. Add milk mixture to oat mixture and stir well. Spray a muffin pan with cooking spray. Pour 1/3 cup of oat mixture into each muffin cup and bake in the oven for 20 minutes or until toothpick inserted into the center comes out clean.
It’s best served crumbled up in a bowl with a drizzle of skim milk, raisins, honey, extra brown sugar, or fruit.
