Red Cabbage, Carrot & Cilantro Slaw

Red Cabbage, Carrot & Cilantro Slaw
Serves at least 10

1/2 head red cabbage, shredded
4 carrots, shredded
1/2 bunch cilantro with stems, roughly chopped
1/3 cup rice vinegar
2 tsp toasted sesame oil
1 Tbsp honey
1 tsp sriracha
1/4 tsp salt
1/4 tsp black pepper

Shred cabbage and carrots. Chop cilantro. In a small bowl, mix together remaining ingredients to make a dressing. Taste, and adjust flavors to your liking. Put all veggies and dressing in a large, lidded bowl. Secure the lid on the bowl and shake.

*Note: This slaw will probably be even better with the addition of chopped peanuts or cashews, if you’re into that kind of thing.
