Shallot Vinaigrette

My sister makes the best shallot vinaigrette. When I asked for the recipe, she said “It’s less of a recipe and more of a technique.” Thus, I give you the technique.

Ingredients

  • 1 clove garlic, crushed
  • 1 shallot, shaved (sliced very thinly)
  • 1/4 cup lemon juice
  • 1/4 cup apple cider vinegar
  • 1-2 Tbsp maple syrup
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup olive oil

Mix together the garlic, shallot, lemon juice and apple cider vinegar in a jar. Let it sit and mingle for 15 minutes.

Add the maple syrup, salt, pepper, and olive oil to the jar. Shake it up. Then, leave it on the counter and shake it often for at least an hour or until you’re ready to serve. Refrigerate the leftovers.
