Vanilla Caramel Sauce

In an effort to lessen my trips to Starbucks and save a few of my bucks, I’ve started making my own iced caramel macchiatos. I grind and cold-brew coffee. I use skim milk. I make caramel sauce. I cheat. I mix vanilla into the caramel sauce because I’m lazy, and it’s delicious.

Vanilla Caramel Sauce

1 cup white sugar
6 Tbsp unsalted or salted butter (depending on your taste preferences)
1/2 cup heavy cream, at room temperature

1 Tbsp vanilla

Melt the sugar on medium-high heat, stirring until it melts smoothly and is amber colored. Throw in the butter and stir until smooth again. Remove from heat and stir in the cream and vanilla. Let cool a few minutes and then pour into a mason jar. Taste it, and then add more vanilla… because who doesn’t love vanilla?
